食物逾期后会为微生物的发展繁殖、化学反应和食物自身的新陈代谢作用而爆发变质，食物腐坏能发生有差别的结果。一种是对人类相对的，相对无害的变质，例如外表、架构和香味的改变，某些营养元素的消耗等；
另一种也是要对人类无益的腐坏，像某类细菌、霉菌一大拨发展繁殖造成毒素，或者某一类食物中的脂肪氧化而变酸，或有一些食品发生分解产生无益成分等，这一类腐烂常常造成有毒有害要素。通常情况下喝了过期的冰淇淋粉，不至于引起中毒，也许会拥有稍微的不舒服。
鄙人由订购食物时，要尽可能筛选靠拢生产日期的产品，这类健康才还有保护。买时也要到规模庞大的商店亦或是连锁超市，不能去小商小贩那订购。
