食物过期后能够因细菌的发展繁衍、分解反应以及食品自己的新陈代谢作用而爆发腐烂，食品腐烂能够发生差异的结果。一种是要对于人类相对的，相对无害的变质，譬如外面、结构和香气的变动，有一些营养素的消耗等；
另一类也是要对人类无益的腐坏，好似某一类微生物、霉菌一大批滋长滋生出现毒素，或者某类食品中的油脂氧化而酸败，或者有一些食品爆发分解出现有毒成分等，这一类变质往往出现有毒有害要素。寻常喝了逾期的咖啡粉，不至于导致中毒，也许会有轻微的不舒服。
大家由买食物时，要尽量选用靠近生产日期的商品，这种类型健康才更加有保护。买时还要来规模巨大的商店亦或是连锁超市，不要来小商小贩那采办。
