食物过期后会因细菌的成长滋生、分解反应以及食物自己的新陈代谢作用而出现腐坏，食品腐坏可能产生不相同的结局。一类是对于人体相对的，相对无害的变质，譬如外貌、结构和香味的变动，某类营养素的消耗等；
另一种则是对人体无益的腐烂，好似某一类微生物、霉菌大批成长繁衍出现毒素，或者某一类食品中的油脂氧化而酸败，或某些食物爆发分解发生有毒因素等，这一类腐烂频频造成有毒有害元素。通常饮用了逾期的冰淇淋粉，不会引起食物中毒，能够会具有稍微的不舒服。
